MUSHROOM TOPPED PORK CHOPS 
4 to 6 pork chops, boneless
1 tbsp. butter

TOPPING:

1 c. finely chopped mushrooms
1 tbsp. butter
1/2 c. chopped parsley
1/3 c. chopped red onion
1 egg
2 to 3 tbsp. of grated cheddar cheese

Heat butter in skillet and brown chops on both sides. Place in oven dish. Saute mushrooms in butter until they are not moist. Cool. Mix together mushrooms, parsley, onion, egg, salt and pepper. Place filling on chops and bake at 350 degrees for 40 minutes. Sprinkle with cheese after 30 minutes of cooking time. Check for doneness at side of a chop by piercing with fork. Juices should run clear.
