BANANA PINEAPPLE NUT BREAD 
3 c. flour, pre-sifted
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 (15 1/2 oz.) can crushed pineapple, drained
1 c. chopped nuts, walnuts or pecans
3 eggs
2 tsp. vanilla
1 1/2 c. Mazola (or any vegetable oil)
2 c. mashed bananas, about 5 medium

Combine dry ingredients and then add nuts. In another bowl combine remaining ingredients. Add to dry ingredients and stir until moistened. Pour into greased loaf pans (with a little sugar sprinkled on the bottom). Bake at 350 degrees for 1 hour and 5 minutes. Cool for 5 minutes and remove from pans. Cool completely before covering.

To make muffins, use half the recipe but use 2 eggs and 8 ounces of drained crushed pineapple. Bake in muffin tins at 350 degrees for 35 to 40 minutes. Half the recipe makes about 24 muffins.

I didn't have my recipe at my boyfriends house and I wanted to make banana muffins. I found this recipe which used the same ingredients. Big was it awesome!! May need to turn down the heat and cook a little longer. So so so good!
