COFFEE CRUMB CAKE | |
2 1/2 cups all-purpose flour 1 tsp. cinnamon 1 tsp. baking soda 1 tsp. salt 1/2 cup (1 stick) butter 2 cups brown sugar 1 egg 1 1/2 cups buttermilk Preheat oven to 350°F. Sift flour, cinnamon, baking soda and salt. Beat butter, add sugar gradually. Beat till light. Beat in egg. Add sifted dry ingredients alternately with buttermilk to creamed mixture. Pour batter into 13x9x2-inch pan that has been greased and floured. Prepare crumb topping and sprinkle over top. Bake at 350°F for 45 minutes. CRUMB TOPPING: 1/2 cup (1 stick) butter 3/4 cup all-purpose flour 1 cup brown sugar 1 tsp. cinnamon Mix butter into flour, sugar and cinnamon with fingers or pastry blender until crumbly.
