“QUICK MIX WHOLE WHEAT PANCAKES” IS IN:

QUICK MIX WHOLE WHEAT PANCAKES 
2 cups whole-wheat flour
2 tsp. baking powder
1 tsp. salt
2 eggs, well beaten
2 cups milk
2 tbsp. vegetable oil

Stir together dry ingredients. Add eggs, milk, and oil. Stir until dry ingredients are moistened (batter may be lumpy). Cook on preheated griddle until bubbles form and edges start to dry. Flip and cook until lightly browned. I like to serve with sliced strawberries and bananas, drizzled with honey.

When Colleen said batter may be lumpy I decided to pour batter into the blend. I was very happy, no lumps and easier to pour in the pan from the blender. My son liked the pancakes.

Excellent recipe. I usually find the whole wheat ones dry or flat but not these! I quickly whisked the eggs, milk and oil together before adding to the dry mix. After adding the mix to the pan, I sprinkled with a few blueberries. Batter is supposed to be lumpy, it's PANCAKES! LOL. You could sift up a big batch of dry and keep on hand. Would make it even easier to make up on those busy days.

Hola! I love your recipe very much, except I will only use 1/2 tsp. of salt, but it is fantastic!
This is recipe could also be good for crepes, then filled with Cajeta (burnt sweet milk) like we do in Mexico.

VERY tasty for a whole wheat pancake! I used skim milk and added 1 tsp. vanilla. Topped with chopped fresh apples and low-fat syrup and these were a huge hit, healthy and perfect for a lazy, rainy and cold Sunday "breakfast for dinner!"
