10 MINUTE NEVER FAIL MICROWAVE
PEANUT BRITTLE
 
1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and baking soda until light and foamy.

Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.

To get nice even squares, pour into a buttered silicone mold with squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I tried this.. however after being in the microwave for 8 minutes my brittle was already very brown and burnt smelling -- So I started over and only microwaved it for a total of 6 minutes and it seems to have come out much better -- Maybe my microwave is too powerful?

I just made a "fool proof" recipe (not this one, but similar) for microwave peanut brittle... and failed. It's totally burnt, and I followed the recipe to a "t". I think my microwave might be too powerful, so I liked the above suggestions of only cooking for 6 minutes. For those of you who did that, did you stir after the first 3 minutes?

I have been making this for several years and everyone loves it. I have had to adjust the time to under 6 minutes. Use 1 1/2 tsp. baking soda for better brittle. Also, this year I have spread it on a buttered silicone mat. Works Great!

I've used a recipe similar to this for years, and agree on bumping up the baking soda to 1 1/2 tsp. Cooking time is based on your microwave - just keep an eye on it the first couple times you make it.

For a twist, replace the peanuts with cashews and add a tsp. of nutmeg and cinnamon.

I made peanut brittle the old fashioned way 2 times this year and both times it turned out too sticky (it would have pulled out your fillings). Someone said it was too humid. Then I found this recipe and it turned out perfect!!! Way to go!! Will keep on using this recipe each year from now on!!!!

Cant wait to try this recipe! LOVE brittle but often time consuming! I use the microwave in ALL my chocolate classes. Love the efficiency. Whenever I try a new recipe I do however start in shorter time spurts to avoind burning my first batch. Thanks for sharing!!

I tried microwaving this for a shorter amount of time as suggested because my microwave is pretty powerful and it turned out much too sticky. I made it again at 6 minutes, 2 minutes and it turned out AMAZING!!! I have made probably six batches since then using this recipe and I highly recommend it! If you don't like the way it turns out, it most likely has to do with the microwave time. I am interested in trying out the extra baking soda next time. What kind of change does this create?

This recipe is great. I followed the advice of previous posts and lowered the time to 6 minutes plus 2 minutes, it turned out perfect. Definitely a keeper for a fulltime RV'ing couple.
