10 MINUTE NEVER FAIL MICROWAVE
PEANUT BRITTLE
 
1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and baking soda until light and foamy.

Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.

To get nice even squares, pour into a buttered silicone mold with squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I also agree to cut the cook time. I burned 2 batches before I went to 4/3/2. Also, I used parchment paper ($1.00 at Dollar Tree for 25 ft.) sprayed with Crisco butter cooking spray to cut down on pan washing. Family said it was good as store bought!

My Aunt Mabel made this all the time, but she used a "heaping" teaspoon of baking soda, so it would be more like 1 1/2 teaspoons... also, she said to be sure to buy FRESH soda!!!

Try with chopped cashews if you want to go all out. This is a good holiday baked good type gift for people who live in RVs to be able to make and gift.

Never Fail? A LIE!!! I got this recipe from my aunt many years ago. Lots of tricks... ingredients at room temp, size of bowl, size of microwave, precise measuring of ingredients... no batch is ever the same. Some are undercooked, then the same thing next time is burnt!

I've been making this peanut brittle for years and everyone loves it and requests it every Christmas. I do add a little more baking soda (1 1/2 teaspoons) but, other than that I don't change any of the ingredients. I've found that 8 minutes is too long in my microwave so I do mine for 6 minutes (stirring half way through) and then 2 minutes after adding the butter. I also butter my baking sheet then keep it in a warm (200°F) oven while I'm making the brittle. It helps it to spread a little better than it does on a cold pan. Now, if I could only figure out a quick way to get the residual sugar mixture out of the bowl. That is the most time consuming part of making this... but it's worth it.

Start with room temperature ingredients. Best to use a large glass pitcher, so you have a handle to use. ALWAYS buy a new box of soda! My Aunt Mabel said that is the secret! Generously butter your cookie sheet & spread fast, you only got 1 try to spread before it gets too hard
