“ALFREDO SAUCE - NOT A MIX!” IS IN:

ALFREDO SAUCE - NOT A MIX! 
4 tbsp. (1/2 stick) butter
4 tbsp. all-purpose flour
1 cup cream (or half and half or milk)
1 cup chicken broth
1 cup shredded Italian cheeses (Mozzarella, Romano, etc.)
1/2 cup Parmesano Reggiano cheese (or plain Parmesan)
3 tbsp. fresh or 1-2 tbsp. dried parsley
4-5 cloves garlic, minced
1/2 tsp. fresh nutmeg
1/4 cup sherry or white wine
salt and pepper

Melt butter and add flour. Cook for 2-3 minutes, stirring constantly to cook flour. Add cream and broth all at once and blend well. Add the remaining ingredients and stir until cheese has melted and sauce is smooth.

Pour over chicken, shrimp or pasta.

Additional cheese can be added to the topping, if desired. Bake in oven until cheese is golden brown.

Very tasty! I didn't have half and half or whole milk, so I used 2% milk. It was a little too thin, so I added a can of cream of mushroom soup and a little corn starch. I kicked it up with some creole seasoning and red pepper. Added some medium sized shrimp and served it over some whole grain shell pasta with an added sprinkle of parmesan. NICE!

One small change I used chicken broth in place white wine or sherry.

Just finished the leftovers for lunch. Yum! Didn't have the plain mozzarella but did have a Mediterranean mozzarella. It added some more flavor. Eliminated the wine. The garlic is absolutely delicious here.

This turned out great, but I had to double the rue part (flour & butter) and add a little more cheese to get it thick enough. I think halfing the chicken broth might have done the same thing.

Very good recipe! I used whole milk and I excluded the wine because I didn't have any. I also substituted ground nutmeg for fresh. Served over bow-tie noodles with cooked cubed chicken breast that I had leftover from the night before. I am looking forward to the leftovers tomorrow! Hubby was hesitant since he's not a fan of alfredo sauce, but even he approved.

Delicious!!!!!!! The only thing I would do is take out the nutmeg... The flavor of it kept making me think if apple pie.... Overall very good!!!!!!

Very delicious! I used straight Romano cheese in place of the Italian cheese mix and used whipping cream which made it quite rich and thick but very tasty! I eliminated the nutmeg because of one of the previous comments and I am happy I did. I will continue to use this recipe!
