EGG AND CRISPY HASH-BROWN BREAKFAST CASSEROLE | |
2 c. hash-browns A little over 1/3 c. butter 8 eggs 1/4 c. sour cream 3/4 c. milk 3 tbsp mild to hot chunky salsa 1/2 tsp onion powder 1/4 tsp garlic powder 1 tsp salt 1 tsp seasoning salt 1/2 tsp pepper 1 c. of cooked and diced meat (ham or sausage preferably) Shredded cheese (no specific amount) 1 small diced tomato 1/4 c. diced bell pepper (optional) Preheat oven to 425°F. Pour hash-browns into baking dish. Melt butter and pour evenly over hash-browns. Combine 1/4 tsp. onion powder, 1/4 tsp. garlic powder, 1/2 tsp. seasoning salt, 1/2 tsp. salt, and 1/4 tsp. pepper in a very small bowl. Sprinkle spices evenly over hash-browns. Bake for 25 minutes. While baking, whisk milk and sour cream together in medium bowl, whisk in eggs, then salsa. Add 1/4 tsp onion powder, 1/2 tsp. seasoning salt, 1/2 tsp. salt, and 1/4 tsp. pepper. Whisk until completely combined. After done baking, evenly layer meat and cheese (to taste) onto hash-browns. Pour egg mix on top. Add diced tomato and pepper evenly onto egg mix. Bake at 350°F for 30 minutes. Add shredded cheese on top (to taste). Bake for 2-4 more minutes (until cheese melts). Eat with sour cream and salsa! Submitted by: Jared s. |
