OLD SOUTH PIMENTO CHEESE SPREAD | |
1 (8 oz.) pkg shredded sharp cheddar 1 (8 oz.) pkg cream cheese, softened 1 (2 oz.) jar diced pimentos (with liquid) 1/2 cup mayonnaise 2 tbsp. vegetable oil crumbled bacon or minced garlic (optional) Open cream cheese and allow it to soften at room temperature for 30 minutes. Combine all ingredients in a large bowl and mix with a electric mixer set to low speed until the ingredients are evenly distributed. Use at once or refrigerate for later enjoyment. Note: The vegetable oil is a softener, without it the mix will become too firm following refrigeration and not be comfortably spreadable. Adding additional mayonnaise will serve the same purpose but will dilute the flavors of the cheeses and pimentos. Submitted by: Don Lovell |
