INSTANT-JELLO PUDDING-OATMEAL
COOKIES
 
1 1/4 cups flour
1 tsp. baking soda
1 cup butter
1/4 cup sugar
3/4 cup firmly packed brown sugar
1 pkg. (4 oz.) instant vanilla pudding mix
2 eggs
3 1/2 cups quick rolled oats
1 cup raisins

Preheat oven to 375°F.

Mix flour with baking soda. Combine butter, the sugars and pudding mix in large bowl. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture, stir in oats and raisins. (Batter will be stiff.)

Drop by teaspoon onto ungreased cookie sheet 2 inches apart.

Bake for 10 to 12 minutes.

Yields: 5 dozen.

I have this same exact recipe on a tear out recipe card advertising Jello brand instant pudding mix, dated 1982. This is the only recipe I've ever since used for oatmeal and for chocolate chip cookies, seriously!! The instant pudding mix adds moisture and body to the cookies! I also always chill the dough overnite, prevents spreading alot.

Great cookies! I used 1/2 cup butter with 1/2 cup coconut oil. In addition to raisins, I added chopped walnuts and coconut. New favorite cookie!
