IMPOSSIBLE ZUCCHINI - TOMATO PIE 
The pie that does the impossible by making its own crust.

2 cups zucchini, shredded
1 c. chopped tomato
1/2 c. chopped onion
1/3 c. grated Parmesan cheese
1-1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 400°F.

Grease 10 inch quiche dish or pie plate, 10x1-1/2 inches. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate.

Bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes.

Makes 6 servings.

Note: For high altitude, bake about 40 minutes.

Delicious! I remembered my grandmother used to make this and many other impossible pies. I did a search and came across all of them on here. Zucchini and tomatoes are abundant right now and my chickens are laying eggs like crazy. Perfect way to highlight these wonderful items this time of year!
