MY EASY POTATO SOUP 
Potatoes
Onion
Salt
Pepper
Milk
Butter
Crackers

Peel and dice potatoes, dice onion then boil potatoes and onion until potatoes are fork tender.

Drain half of water and replace with milk. Add some butter, salt and pepper to taste. Cook until hot then its done. Top with crackers.

Use heavy cream for an added thicker soup... But I agree the best soup ever... Whenever I need comfort I make this and it solves all my blues.

I use same method, I agree about using heavy cream but if I don't have it I use canned milk. I think it has a little richer flavor. Also add the extras to vary the recipe. Green onion or chives, bacon, cheddar etc. Add a dash of instant mahed potatoses if you need to thicken. Serve with cheese garlic biscuits!

Love this recipe, same as my dad's with one change, take 1/4th of the potatoes and mash them to thicken the soup.

Bacon, onions, ham, great additions...oysters added are an interesting addition also.

I am on a strick diet and can only have starch at lunch and wanted a new recipe when I found this I fell in love! It is amazing! I added a fried some bacon first and added it in while the potatoes and onions were cooking to give it some flavor and before I ate it at lunch I heated it up and melted some shredded cheese on top and added a little more bacon. I must say, this is a great recipe! I will be cooking this a lot! Thanks for sharing!

I make pretty much the same way, but I am even lazier. I use frozen diced potatoes and onion. I hate peeling and chopping veggies. I also boil my potatoes and onion in chicken broth and only add just enough milk to give it the creamy "look." this cuts down on fat to make up for the cheese and bacon I put on top... And don't forget the finely sliced green onion :)
