“FRANK'S SALMON PATTIES” IS IN:

FRANK'S® SALMON PATTIES 
This recipe makes 4 patties. I prefer to double the recipe.

1 (7 oz.) pkg. pink salmon (I use Chicken of the Sea)
1 green pepper, finely chopped
4 green onions, finely chopped
1/4 cup mayonnaise (Hellmann's or Best Foods)
1 tbsp. freshly squeezed lemon juice
pinch of FRANK'S® red cayenne pepper (or to taste)
1 large egg, lightly beaten
1/4 cup freshly chopped Italian parsley
1/2 tsp. paprika
1/3 tsp. garlic powder
1/4 cup seasoned breadcrumbs
1/4 cup crushed Ritz crackers
2 tbsp. grated Parmesan cheese (optional)
1/2 tsp. dill

In a mixing bowl, flake salmon with a fork and stir in green pepper, onion, mayonnaise, lemon juice and cayenne pepper. Add the lightly beaten egg, parsley, paprika, garlic powder, breadcrumbs, cracker crumbs, cheese and dill. Shape into patties.

In a lightly buttered skillet over medium heat, fry cakes until golden brown on both sides.

Makes 4 patties. Recipe may be doubled.
