SHRIMP AND BLACK BEANS PITA | |
8 tbsp. salted butter (1 stick) 4 limes 1 tablespoon garlic, pressed 1 tablespoon hot sauce (FRANK'S®) or 1/4 tsp. cayenne 1 1/2 lbs. shrimp 1 can black beans, drained Press garlic through a garlic press or blend to a puree. Melt butter; stir in lime juice and garlic while still hot. Add hot sauce or cayenne. Marinate shrimp in refrigerator for 1 hour. Grill over hot coals for 4-5 minutes or until shrimp browns and is cooked through, basting with marinade once at start of cooking. Toss grilled shrimp with black beans and serve in Pita bread.
