“BELLE'S BLACK BEAN CHILI” IS IN:

BELLE'S BLACK BEAN CHILI 
1/2 lb. lean ground beef
1 large onion, diced
3 cloves garlic, minced
2 (15 oz. ea.) cans black beans
1 (28 oz.) can tomato puree
1 (15 oz.) can corn, drained
1 tbsp. chili powder
1 tsp. ground cumin
1/2 tsp. ground black pepper

Preheat a deep skillet over medium-high heat. Brown beef until no longer pink, about 5 minutes. Drain.

Add onion and garlic and sauté until soft, about 5 minutes. Add beans (undrained), tomato purée, corn, chili powder, cumin and pepper. Bring to a boil, cover and lower heat; simmer gently for 10 minutes until thoroughly heated.

Makes 6 servings.

I added a couple of chopped jalapeno peppers, but saved a portion of the chili separately for those who don't like "hot." Also had sour cream and good cheddar cheese available. Served with corn meal muffins

The single best easy chili I've ever made. I did alter slightly, since I knew that a bit more heat would be required. I used only can of tomato puree, then added a can of Ro-Tel tomato and pepper mixture, then adjusted the liquid by draining one can of black beans. This chili is incredibly good & hearty, with just the right burn and linger, and those wonderful black beans.

We had this tonight, as I had everything on hand. It was a good way to use up supplies. We are going to use the leftovers for nachos in a couple of days by adding a can of fire roasted tomatoes. I don't like things very spicy, but this could be doctored up in a variety of ways if this basic recipe didn't look appealing enough.
