NANNA'S BANANA COOKIES | |
1 cup (1 stick) butter or vegetable shortening 1 1/2 cups sugar 2 eggs 3 cups sifted all-purpose flour 1 tsp. salt 2 1/2 cups milk or banana yogurt 2 bananas, mashed 1 1/2 tsp. vanilla or banana extract Preheat oven to 400°F. In a large mixing bowl, beat butter or vegetable shortening, gradually adding sugar until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Whisk together flour and salt. Add flour mixture alternately with milk to egg mixture, beating well after each addition. Stir in mashed bananas and vanilla. Roll out cookie dough until paper thin, then cut into shapes with cookie cutters that are dusted lightly with flour. Place leaving 2-inch space between cookies on greased baking sheets. Sprinkle with sugar and bake in a preheated 400°F oven for about 5 minutes (longer for larger cookies) or until cookies are golden. Submitted by: Belle |
