BANANA OATMEAL COOKIES 
A Crisp Cookie.

3/4 cup shortening (Cisco)
1 1/2 cups sifted all-purpose flour
1 cup sugar
1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. nutmeg
1 tsp. cinnamon
1 egg, beaten
1 cup mashed ripe bananas (about 2 to 3 bananas)
1 3/4 cups quick-cooking rolled oats
1/2 cup chopped nuts

Preheat oven to 375°F.

Sift together flour, sugar, baking soda, salt, nutmeg and cinnamon. Cut in shortening with a pastry blender. Add egg, banana, rolled oats and chopped nuts. Beat until thoroughly blended.

Drop by teaspoonfuls onto a cookie sheet.

Bake at 375°F for 15 minutes.

Makes 5 dozen cookies.
