DINKI'S COCONUT POUND CAKE 
This is a deliciously moist cake. Even people that don't like coconut seem to like this cake.

1 cup Crisco (solid)
2 cups sugar
5 eggs
2 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1 cup buttermilk
1 tsp. coconut flavoring
1 cup angel flake coconut

GLAZE:

1/2 cup sugar
1/4 cup water
1/4 tsp. coconut flavoring

Preheat oven to 325°F. Prepare tube pan as you normally do.

Mix sugar and Crisco together, add eggs one at a time, mixing well after each addition. Sift together flour, salt and baking powder. Add flour mixture alternately with buttermilk to sugar mixture, beginning and ending with flour mixture. Add coconut flavoring, mix,add coconut, mix well. Pour into prepared tube pan bake for one hour or until toothpick, knife or whatever you use to check for doneness, comes out clean.

Prepare glaze: Put all glaze ingredients in small saucepan and bring to a boil, let boil, stirring constantly, for three minutes

Poke holes into cake with long pronged fork and pour glaze over cake while it is still in the pan. Let it cool completely before removing from pan. You will have to run a butter knife around the edges of pan and tube in order to remove the cake.
