CORN FRITTERS 
1 egg
1/4 c. milk
1 c. Bisquick
1 can whole kernel corn, drained
Black pepper

Blend together egg, milk, and Bisquick. Stir in corn. Add pepper to taste.

In a wok or frying pan, heat 2 inches vegetable oil. Using 2 teaspoons, gently drop a rounded teaspoon of fritter batter into hot oil. Fry 6-8 fritters at a time, turning until golden brown. Drain on paper towels.

These were very tasty. I used frozen whole kernel corn, thawed, instead of canned corn. I wasn't sure how much corn to use since a 15 oz can of corn includes the liquid. Next time I'll use more corn. It seems you need just enough batter to hold the corn together. Otherwise, they are very "bready".

Very good and very easy. I added a little sugar to the mixture and if desired you could add another small can of corn and some sweet red pepper would really make it special. But overall an excellent side dish or appetizer.

This is quick and good. The only thing I kicked it up 2 notches. Added 1 finely chopped habanero hot pepper and 1/3 cup of sharp cheddar cheese.

They use this at my restaurant and they are absolutely amazing. Just roll them in powdered sugar when they are drained and serve. Fabulous for a meal, appetizer or a snack.

I loved this recipe, but of course tweaked it a bit. We don't normally have milk on hand but I have buttermilk powder and used that. Mine also are made more like pancakes...
