I first made this dish about a year ago and I now make it at least 3 times a month. 2 boneless skinless chicken breasts, boiled 4 potatoes, sliced in about 1/2-inch thickness 2 cups fresh baby carrots (left whole) 1 (15 oz.) can diced tomatoes (Hunts) 1 tbsp. garlic salt and pepper, to taste In a large skillet place chicken in just enough water to cover the bottom. Sprinkle chicken with salt and pepper. Let chicken steam for 15 to 20 minutes then add carrots. Let carrots cook for 20 minutes then add potatoes, tomatoes and garlic powder. Let cook until the juice from the tomatoes thickens. I normally cook on high and then the last 10 minutes or so I put on simmer and let all the flavors come together. You may add more or less garlic.
