RAISIN BRAN FLAKES CEREAL
MUFFINS
 
4 c. raisin bran flakes cereal
2 c. milk
1/2 c. salad oil
2 eggs
2 c. flour
1/2 c. sugar
6 tsp. baking powder
1 tsp. salt

To four cups raisin bran flakes cereal add 2 cups milk to soften flakes. Add 1/2 cup oil and 2 eggs. Blend well.

In a separate bowl, mix 2 cups flour, 1/2 cup sugar, 6 teaspoons baking powder and 1 teaspoon salt. Mix dry ingredients with bran flakes mixture. Fill greased muffin tins 2/3 or more full. Bake in 400 degree oven 20 minutes. Yield: about 18 muffins.

I had used this recipe many years ago and recently looked for it again. I changed the flour to 1/2 whole wheat flour and used Splenda for the sugar. the object being my husband has been diagnosed pre diabetic. I couldn't find nutritional info on the original recipe.

These are so quick easy and fantastic! I had a bunch of slightly state bran flakes and found this recipe. Within an hour we had these great muffins for breakfast instead of stale cereal :)

Love that they are not too sweet, and not oily. Nice texture. The 400°F oven with greased muffin tin made for nice light crunchy edges. Plus the recipe says 18 muffins, and sure enough it filled exactly 18 spaces in my muffin trays!

FYI They don't puff up much in the oven but the texture is good, so that doesn't matter at all.

I love these! I substitute Splenda for the sugar and use the Ultra-Skim milk. I also add diced apples to mine. Great snack for my diet. Keep well in ziploc storage bags and also freeze well.

Divine! So easy! I used organic natures path hearty flax raisin, unsweetened almond milk and organic applesauce and honey instead of oil and sugar. And added organic blueberries... Yummy!

What is the calorie count on these muffins the raisin bran flakes cereal muffins. They are great I have made them twice. I just add cinnamon, nutmeg and ground cloves and that adds that bit of warmth to a delicious muffin. Thanks!

My mother has been making these muffins since I was a child. I'm 62 now and I have been making them since my children were small! It's been a staple in our lives. Your recipe is wonderful. The only difference is I use baking soda instead of baking powder. Don't notice any difference
