CAULIFLOWER AU GRATIN 
1 lg. head cauliflower (6 c.)
1/4 c. butter, divided
1/2 c. diced onion
1 1/2 c. (6 oz.) shredded Cheddar cheese
1 c. (8 oz.) sour cream
1/4 tsp. salt
1/2 c. dried bread crumbs

Break cauliflower into sections. Cook for 10 minutes in boiling, salted water. Drain well. Combine cauliflower with 2 tablespoons butter and onion, cheese, sour cream and salt. Spoon into a 1 1/2 quart casserole.

Melt remaining butter and toss with bread crumbs. Sprinkle over the cauliflower mixture. Bake at 350 degrees for 30 minutes or until heated through. Yield: 10-12 servings.

I made this for me and the husband last night and it was SO good. I mixed broccoli with the cauliflower omitted the sour cream and added mozzarella cheese instead. I sauteed onions and kielbasa sausage in a pan while the veggies boiled. They were done at the same time. I added about a tablespoon of flour in the onion meat mix and then spread on top of the veggies after draining. Put in the oven for about 10 min with cheese on top... DELICIOUS!!!!!

Really enjoyed this dish. It had all the goodness of potatoes au gratin without the potatoes. It was a great side dish for rib eye steaks. Will definitely make it again.
