“BELLE'S EASY BANANA BREAD” IS IN:

BELLE'S EASY BANANA BREAD 
1 cup sugar
1 cup (2 sticks) butter
2 eggs
3 ripe bananas, mashed
1 tsp. baking soda
2 cups flour
1/2 cup walnuts (optional)

Mix in order given. Put in greased loaf pans.

Bake at 350°F for about 1 hour. Allow 24 hours before cutting.

Very simple and easy to follow. I did, however add peaches, diced and a little bit of cinnamon. That's the cool thing about full proof recipes you can adapt them to your taste. I doubled the recipe and ended up with four loaves. That would be the only drawback, not knowing how many bread pans and what size bread pan to use but that's a minor issue, this will be my go to banana bread recipe from now on and I appreciate that there was no salt added to the recipe. I love the idea of banana pudding added in, and I was skeptical that the deal was a little stiffer than the pourable banana batter that I've used before OK I'm off to find some banana pudding for my next batch. Thank you so much for sharing this easy no screwup make it your way banana bread recipe. And I'm telling you you're allowed to try peaches and cinnamon and with the banana bread.

Great, simple, recipe. The cooking time was a little long for my oven. The first loaf was more brown than I like but after tweaking it to 45 minutes the 2nd loaf was excellent. I added a few chocolate chips and a table spoon of rum. Yum. Thanks Belle!

Yes and other fruit and nutmeg, anything else you wanna add to it. I added cinnamon and peaches and it turned out divine.

This recipe is excellent... my son and mother approved... I just want to say I did not even bother to crush or mash the banana when I added to the creaming of shortening, and sugar... just put them in whole and the mixer creamed it with the wet ingredients.. just saying.. :)
