“BLENDER MAYONNAISE” IS IN:

BLENDER MAYONNAISE 
1 egg
1 tbsp. vinegar plus 1 tbsp. lemon juice or 2 tbsp.vinegar
3/4 teaspoon salt
1/2 teaspoon dry mustard
1 cup vegetable oil, light olive oil or peanut oil

Put the egg, seasonings, vinegar, lemon juice and 1/4 cup of oil into the blender or food processor container, cover and remove small cap or feed tube.

While processing, pour in the remaining oil in a thin, steady stream. Use a spatula if necessary to scrape mixture down occasionally.

Herbs or spices may be added to vary taste; grated lemon peel, parsley, celery seed, oregano, basil, smoked paprika, French tarragon, and minced shallot or garlic are all good choices! It all depends upon what you're planning to serve it with. For example: Lemon and parsley (and even a little Old Bay) go well with lobster or crabmeat salad or other fish dishes.

Yield: about 1 1/4 cups

Easy and cheap to make. Don't use EVOO though, stick to a simple vegetable oil. Yummy!!

We are kind of stuck at home because of Covid-19. I was out of mayo and wanted to make BLTs for supper. This is very good if kind of messy to make. I have my own chickens so used a fresh laid egg. I had to use a food processor because I lent out my blender. I will make again!

Can the salt be skipped or substituted? I was looking for a sugar-free, salt-free Mayonaise Recipe. I have Type 2 Diabetes and AFib (Atrial Fibrillation), so I need to avoid both.

If not using salt it won't taste right.

Or just use Greek yogurt on the side.
