BUTTERSCOTCH BARS 
1/2 cup (1 stick) butter
2 cups brown sugar
2 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons baking powder
2 eggs
1 teaspoon vanilla
1 cup coconut flakes

Preheat oven to 350°F.

Melt butter over low heat in a 3-quart pan. Add brown sugar; heat until bubbly. Cool. Add eggs, coconut, vanilla and dry ingredients, spread in shallow 1x10x15-inch greased pan.

Bake at 350°F for about 25 to 30 minutes.

Makes about 60 bars.
