“BARBECUED CHICKEN BREASTS” IS IN:

BARBECUED CHICKEN BREASTS 
6-8 chicken breasts

SAUCE:

2 tbsp. butter
2 tbsp. ketchup
2 tbsp. lemon juice
4 tbsp. water
3 tbsp. brown sugar
2 tbsp. vinegar
5 cloves garlic, minced
2 tbsp. Worcestershire sauce
2 tsp. dry mustard
2 tsp. paprika
2 tsp. salt
2 tsp. chili powder
1/2 tsp. red pepper

Remove skin from chicken breasts. Place each one in a piece of heavy duty aluminum foil that has been sprayed with olive oil. Cup foil around chicken so it will hold the sauce and pour sauce over each piece. Wrap them tightly and bake at 450°F.

To make the sauce, combine all of the above sauce ingredients and mix well or process in a blender or food processor. This will be enough to use with 6-8 chicken breasts. Blend sauce well and use over chicken in foil cups as directed above.

This sauce will keep for several weeks in a jar in the refrigerator. It is also excellent to spread on ham steaks; broil for 10 minutes on each side. Spread sauce on each side as you turn the steak over and broil for 8 minutes. It is also a wonderful sauce to serve over grilled pork chops.

Variation: If using a blender, you can add a small can of pineapple chunks for a Hawaiian version. Add a tablespoon of soy sauce for extra flavor.
