OVEN BAKED BBQ CHICKEN BREASTS
(FROZEN)
 
1 lb. boneless skinless chicken breasts, frozen (about 3-4 breasts)

Quick Homemade BBQ Sauce:

1/4 cup ketchup
1/4 cup brown sugar
1 tbsp. apple cider vinegar or white vinegar
2 tsp. prepared yellow mustard
1 tbsp. water
1/4 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. black pepper
Hot sauce, to taste

Preheat oven to 375°F.

Combine ketchup, brown sugar, vinegar, mustard, water, garlic powder, salt, pepper and hot sauce in a bowl and stir until smooth and well blended. Set aside.

Line a baking pan with foil and place frozen chicken breasts in pan. Pour about 3/4 of sauce over chicken. Bake at 375°F for 45-50 minutes or until done, basting chicken with the remaining sauce every ten minutes. Serve with rice or steamed vegetables.

Tasty food without much salt is sometimes difficult to find, as anyone on a low-sodium diet knows. This recipe, without the salt and using low-sodium ketchup, is great! Once, I put a layers of sliced onions and sweet peppers on the bottom of the pan. Delicious! I like a lot of barbeque sauce, so I doubled the sauce mix. It was enough for 4 breasts, but I would have liked more, so next time, I'll quadruple the recipe. Cooking frozen chicken is such a time saver!

This recipe was absolutely delicious! The whole family loved it, and they can be pretty picky when it comes to anything knew. I had to double the recipe to make enough for everybody, so I just did the frozen chicken at 425°F for about 1 hour and 15 minutes and the chicken was sooo juicy and tender!! Definitely a new family favorite (and so super easy too).

Love the sauce ingredients. Am going to fix this in Crock-Pot instead of oven. Think it will infuse the sauce better and eliminate the basting every 10 minutes. Has to be great... Thank you for submitting!
