“ROSEMARY-GARLIC ROASTED RED POTATOES” IS IN:

ROSEMARY-GARLIC ROASTED RED
POTATOES
 
7 Red Bliss potatoes (skin on and quartered)
3-4 tablespoons extra virgin olive oil
1/2 teaspoon salt (or to taste)
1 teaspoon freshly ground black pepper
2 teaspoons garlic powder or 3 cloves fresh garlic (finely minced)
2 teaspoons dried rosemary or 2-3 sprigs of fresh rosemary (stem removed)

Preheat oven to 350°F.

Quarter potatoes with the skin on and place in a medium sized mixing bowl. Add olive oil, salt, pepper, garlic and rosemary and toss in bowl until evenly coated. Transfer seasoned potatoes to a nonstick baking dish or a baking sheet covered with aluminum foil.

Place in oven for about 30-35 minutes or until golden brown and tender.. then ENJOY! These potatoes are so easy and delicious! And they make a great side dish for a variety of meals! I hope you enjoy my recipe! And let me know what you think!

Thought this would be great. However, it was only OK. I'd have to give it a 3 star out of 5. After 35 minutes they still weren't brown and I even turned the oven up to 400°F at the end of 20 minutes.

In that case, I would suggest cutting the potatoes into smaller pieces, they roast faster that way. Also an additional tablespoon of olive oil might do the trick :)

Good recipe, I use a convection oven at 425°F or so, and it browns the potatoes pretty fast, Miss Sperenza.

I'm so glad all of you enjoyed my recipe! :) I do love them and make them often for my boyfriend, he really has a thing for those baby red potatoes lol.

Cutting them into smaller pieces instead of quartering them is great for having them bake faster and for a crispier consistancy, if I could change the recipe I would change the oven temp to 400°F, but everyones oven is different so experiment with that I guess. Thanks again for the reviews everyone! :)

It's a great dish, I love how crispy the potatoes get in the oven. Your tips are really helpful too! I will definitely try baking them at 400°F next time and see if that works better for me.

I have been using a recipe close to this for years. Try this alternitve sometime. Seasonings: Lawry's seasoning salt, garlic, onion, Parmesan cheese powders and parsley. Mix these onto oiled potatoes and bake at 450°F for 20 to 30 minutes (dependng on cut size), turning once.

I have made these many a time. Changes I've made with good results is to use baby red potatoes and half each; place cut side up; used dry oregano leaves;increased the garlic; Baked at 450°F to get a crispy topped potatoes. Have also squeezed fresh lemon juice over the potatoes before serving. No I'm not greek!

This recipe is best used with Green Giant Rosy Red Yellow Potatoes.. mostly always found at Sam's Club. They have such high flavor and cook faster.. Regular reds are best with Green Beans.

Instead of rosemary, I added scallions and a bit of green onion pieces. I covered for 30 minute sand then uncovered for 20. Nice!
