“ROSEMARY-GARLIC ROASTED RED POTATOES” IS IN:

ROSEMARY-GARLIC ROASTED RED
POTATOES
 
7 Red Bliss potatoes (skin on and quartered)
3-4 tablespoons extra virgin olive oil
1/2 teaspoon salt (or to taste)
1 teaspoon freshly ground black pepper
2 teaspoons garlic powder or 3 cloves fresh garlic (finely minced)
2 teaspoons dried rosemary or 2-3 sprigs of fresh rosemary (stem removed)

Preheat oven to 350°F.

Quarter potatoes with the skin on and place in a medium sized mixing bowl. Add olive oil, salt, pepper, garlic and rosemary and toss in bowl until evenly coated. Transfer seasoned potatoes to a nonstick baking dish or a baking sheet covered with aluminum foil.

Place in oven for about 30-35 minutes or until golden brown and tender.. then ENJOY! These potatoes are so easy and delicious! And they make a great side dish for a variety of meals! I hope you enjoy my recipe! And let me know what you think!

Prepared this recipe, but cooked for 20 minutes then added breaded chicken Parmesan and red sauce and placed back for 25 minutes at 425°F. Awesome!!

Very good and easy. I actually baked them at 375 for 30 minutes and they were perfect.. only change I would make next time would be not adding as much rosemary. It was a little too much.

I was looking online for roasting red potatoes and found this one. I worked out great and I too added 10 minutes. I did use fresh Rosemary and black pepper. The flavors really came out nice. Thanks

Just a little note for people who don't really have the time to cook so long. You can always put you're potatoes in water and boil until tender, then take out and put in an ice bath and refrigerate until you want to cook in oven. Saves a whole lot of cooking time.

Chuck. You must cook them with foil over them for about 25 minutes then without the cover for 10 more minutes. You will get the golden brown color.

Have tried before and cutting into smaller chunks and bumping up to 400°F. Also, adding some parsley flakes to see how that goes. You can do a lot with this recipe.
