“ROSEMARY-GARLIC ROASTED RED POTATOES” IS IN:

ROSEMARY-GARLIC ROASTED RED
POTATOES
 
7 Red Bliss potatoes (skin on and quartered)
3-4 tablespoons extra virgin olive oil
1/2 teaspoon salt (or to taste)
1 teaspoon freshly ground black pepper
2 teaspoons garlic powder or 3 cloves fresh garlic (finely minced)
2 teaspoons dried rosemary or 2-3 sprigs of fresh rosemary (stem removed)

Preheat oven to 350°F.

Quarter potatoes with the skin on and place in a medium sized mixing bowl. Add olive oil, salt, pepper, garlic and rosemary and toss in bowl until evenly coated. Transfer seasoned potatoes to a nonstick baking dish or a baking sheet covered with aluminum foil.

Place in oven for about 30-35 minutes or until golden brown and tender.. then ENJOY! These potatoes are so easy and delicious! And they make a great side dish for a variety of meals! I hope you enjoy my recipe! And let me know what you think!

I substitute purple potatoes, which i just harvested from my garden. My family loved them! Thanks. Made smaller pieces and added some shallots and green onions also from garden. I always improvise but thanks for the starter recipe.

I just love these potatoes! I've been making them with just dried rosemary (chopped very fine) and some dried parsley mixed with a bit of salt for a long time but the addition of a bit of garlic powder made them even better! I quarter egg-sized red potatoes and mix them with the olive oil and seasonings in a zip-lock bag. 30-35 minutes at 350°F is just about right and I turn them about half way through cooking time. My favorite way to eat them is to drizzle the warm potatoes with some ranch dressing before eating. Yum! Just lovely with a BBQ steak or even oven baked chicken! Great recipe! Thanks for sharing.

I made this for a luncheon at my church and it was a hit. Everyone loved the potatoes! It was easy to prepare. I mixed the olive oil and seasonings the evening before so all the flavors soaked in the oil. I used fresh garlic (smashed). I made 10 lbs of potatoes and it took an hour to bake but the wait was well worth it.

Thanks for your recipe my fiancée and I enjoyed it last night. And yes cutting the potatoes smaller is a faster roasting but I used garlic, parsley, salt & pepper. I put everything in Ziploc bag with virgin olive oil and mixed it all together. Very tasty, thanks again!
