NANCY'S RAISIN MUFFINS 
1 cup raisins
1 cup water
1 tsp. baking soda
1/2 cup (1 stick) butter of shortening
3/4 cup sugar
1 1/2 cups all purpose flour
1 egg
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Preheat oven to 400°F. Grease muffin tins.

Boil raisins in 1 cup of water until 1/2 cup of water is left. Drain and set raisin water aside. Add baking soda to raisin water.

Cream butter and sugar together, then add flour, egg and seasonings. Add raisin water and raisins and mix until combined. Fill greased muffins tins.

Bake at 400°F for 18 minutes or until done.

These raisin muffins are amazing! I love the way they look and taste. They were very moist, and had a nice texture that made them easy to eat. The raisins were well incorporated into the batter, and gave them a great flavor. I'd definitely make these again.
