“APPLESAUCE PANCAKES” IS IN:

APPLESAUCE PANCAKES 
1 cup flour
1 cup applesauce
1 1/2 teaspoons baking powder
1/2 teaspoon lemon zest
1/8 teaspoon salt
1/2 teaspoon cinnamon
2 eggs, separated
1/4 teaspoon vanilla extract
1 1/2 teaspoons melted butter
1 tablespoon sugar

Sift flour, baking powder, and salt into a large mixing bowl. In a separate bowl, beat yolks and butter; add to flour mixture.

In another bowl, beat egg whites until stiff. Add remaining ingredients to the flour mixture, and fold in egg whites.

Heat a skillet until a drop of water will "dance" across the surface. Melt a teaspoon or so of (additional) butter on the skillet; drop 1/4 cup of batter onto a hot.

Flip pancake when bubbles appear along edges.

Top with applesauce, maple syrup or your favorite topping.

Makes 10 pancakes.
