ARKANSAS DATE BREAD | |
1 cup sifted all-purpose flour 1/2 teaspoon salt 1 teaspoon baking soda 1 cup whole wheat flour 1 cup prepared bran 1 cup pitted dates 1/2 cup molasses 1 1/4 cups buttermilk or plain yogurt l 1/2 tablespoons melted butter 1 egg, slightly beaten Sift white flour once. Measure and sift again with salt and baking soda. Add whole wheat flour and bran. Cut dates in small pieces, discarding any pits, and mix them well through the dry ingredients. Add the molasses, buttermilk or plain yogurt, and butter to the egg, and stir this mixture into dry ingredients. Pour into a well-greased loaf pan. Bake in a preheated oven (350°F.) for 90 minutes. Cool before slicing. Serve slices spread with whipped cream cheese or softened cream cheese. Yield: 1 loaf. Submitted by: Belle |
