TACO SALAD DELIGHT! 
Kids love this!

1 (15 oz.) can refried beans
1 lb. ground beef
1 1/2 cups crushed Doritos
1 box Rice-a-Roni (beef flavor)
1 tsp. cayenne pepper
1 1/2 cups picante sauce
2 cups shredded cheese (Mexican "fiesta" blend, sharp cheddar, etc.)
2 cups chopped tomatoes
2 cups shredded lettuce

SUGGESTED TACO SALAD TOPPINGS:

dairy sour cream
sliced black olives
sliced pickled jalapenos

The toppings list can go on and on. Use whatever toppings for taco salad you like. Be creative!

Brown ground beef & drain. Set aside, cover and keep warm.

In same skillet, prepare Rice-a-Roni according to package directions. Place beans, a pinch of cheese and about 2 tablespoons picante into a separate microwave proof bowl, stir. Cover beans and heat in microwave about 2 minutes.

Pour remaining picante sauce over rice, sprinkle pepper, add grounds beef and stir. Simmer for about 2-3 minutes until hot.

Here is the fun part: spoon out about two tablespoons of beans onto one individual plate, and with spoon back, spread out flat layer, add light layer of crushed Doritos, top with beef mixture, cheese, lettuce, tomatoes and remaining toppings.

Voila!
