SOUTHERN TACO SALAD 
1 lb. lean ground beef
1 tbsp. taco seasoning
medium head of iceberg lettuce, chopped
2 medium tomatoes, diced
2 cucumbers, peeled and diced
4 green onions, chopped
8 oz. shredded cheddar jack cheese
1 cup nacho cheese or ranch dressing
1/2 bottle Catalina dressing (or more as needed)
tortilla chips, crushed
1 ripe avocado (optional)
8 oz. dairy sour cream

Cook ground beef in a skillet until done. Add taco seasoning, turn on low to keep warm.

In a large bowl add lettuce, tomatoes, cucumbers, green onions, cheeses, salad dressing and taco chips. Toss. Add warm ground beef and toss.

To serve, top with sliced avocado (if desired) and sour cream.

Serves 6.
