EASY CINNAMON COFFEE CAKE 
Cake:

1 cup all-purpose flour
3 tsp. baking powder
1/2 tsp. cinnamon
1/2 cup milk
1/2 cup sugar
1/2 tsp. salt
4 tbsp. butter, melted
1 egg

Topping:

1/4 cup sugar
1/2 tsp. cinnamon

Preheat oven to 350°F.

Mix cake ingredients in bowl and pour into a greased 8x8-inch pan. For topping, mix 1/4 cup sugar and 1/2 tsp. cinnamon and sprinkle on top.

Recipe may be doubled.

Bake at 350°F for 15 to 20 minutes.

Very good, quick and easy! Could be versatile, add apples or pecans, etc. Next time will butter sides and bottom of pan then sprinkle with cinnamon/sugar so that its on top, bottom and sides.

Easy to prepare and great tasting :) The second time I baked it I spread some of the cinnamon sugar mixture on the bottom of the pan and it created a lovely sticky syrup which , when cooled created a coating on the bottom of the cake :)

Very good, I changed it though :) I took out the cinnamon in the cake and added a tsp. of vanilla and made a streusel topping (5 tbsp. sugar, 1 tsp. cinnamon, 3 tbsp. flour and 2 tbsp. butter (I have never used margarine so I don't know if that is okay)), baked for 20 minutes and the cake came out lovely, also used 9-inch pan as I only have 8-inch round and not sure if that would work. We have gone from a family of 4 to sons off and living on their own in college and this size is perfect for two old geezers ;-)

Oh this is wonderful! I found this looking for a quick dessert and it was great to already have all the ingredients in my kitchen! This is great, but I do plan to try the idea of making more of a streusel topping next time. I imagine it will present better that way. But regardless- this is great! thanks for posting!

Awesome!!! I even used baking soda because I was out of baking powder... (used 1 tsp. baking soda with 1/2 tsp. cream of tartar and 2 tsp. vinegar). Also - I added 1 ripe mashed banana, some baking spices mix, 1/2 cup chopped walnuts... And did the flour/brown sugar/butter/salt/ vanilla streusel topping variation listed in the other comments. This combo was the BEST coffee cake I have EVER made!!!

I decided to give it a go and boy I was surprised how fabulous it turned out! Light and very yummy. I decided to make a streusel topping instead and added it to the mixture and bake. It does take 30 minutes to bake so leave it in. In a pinch when someone comes over, do it.

I took the cinnamon out of the cake itself, and added 3 tbsp. of sour cream. Then I made a "crumbly" topping; 4 tbsp. butter, 6 tbsp. brown sugar, roughly 4 tbsp. flour, and 1 1/2 tsp. cinnamon.

What you did sounds more like my mom's old recipe, which I couldn't find. Thanks much for posting this - I knew my mom added sour cream and used brown sugar instead of plain sugar for the streusel effect.

This is a great little snack cake... I've made it a number of times now. Recently I replaced the butter with applesauce. It made the cake a bit denser, but lower in fat, and almost kind of fudgy. Really good! It makes a great, low fat, not super sweet dessert.

I made this cake and what I did was put half of batter in a 9-inch round then put half of topping over it put the rest of batter over the topping then sprinkled the rest over the top. By the way I used country crock and it came out just fine.

This was so easy and simple, yet really good. Makes a very light, moist cake. It took me a little longer to bake, about 25 minutes. Check with a toothpick inserted into center of cake, the toothpick should come out clean. Used whole wheat pastry flour and nonfat milk. Will definitely make again.
