LOW-CHOLESTEROL LOW-FAT CINNAMON COFFEE CAKE | |
1 1/2 c. sifted flour 2 1/2 tsp. baking powder 1/2 c. sugar 1 egg white 1/4 c. oil 3/4 c. skim milk Sift together flour, baking powder, and sugar. Blend in egg white, oil, and milk. Stir until flour is moistened. Make topping by mixing together 1/2 cup each of brown sugar and chopped pecans, 2 tablespoons each of flour and oil, and 2 teaspoons cinnamon. Spread half the batter in an oiled 8 inch square pan. Sprinkle on half the topping. Add remaining batter and sprinkle rest of topping. Bake at 375°F for 30 minutes. 8 servings. Nutrition information (per serving): 204 calories, 62 calories from fat, 7g total fat, less than 1mg cholesterol, 169.6mg sodium, 68.3mg potassium, 32g carbohydrates, less than 1g fiber, 13.8g sugar, 3.7g protein. |
