TOMATO CHEESE PIE 
CRUST:

1 1/4 c. flour
1/2 tsp. dried sweet basil
1 tsp. salt
2 tsp. baking powder
1/2 c. vegetable shortening
1/2 c. sour cream

Combine flour, basil, salt and baking powder. Cut in shortening. Add sour cream and mix until dough sticks together. Grease and flour pie pan. Pat above mixture into pan. Add flour if it sticks to fingers.

Slice 5 to 6 tomatoes thin and drain. (Do this well ahead.) Place tomatoes in crust and cover with topping.

TOPPING:

1 c. mayonnaise
1 heaping c. shredded cheddar cheese
1 tbsp. chopped onion

Combine and place on top of tomatoes. Bake at 350 degrees for 30 to 35 minutes.
