CHEESE TOMATO PIE 
4-5 slices slightly stale bread
3/4 tsp. crushed basil
3 med. tomatoes, peeled and sliced 1/4 inch thick
1 1/2 c. grated Gruyere or Monterey jack cheese
1 1/4 c. milk
3 eggs, beaten
2 tbsp. green onions, chopped
1/2 tsp. dry mustard
Salt and pepper to taste

Cut bread into 1 inch cubes to make 3 cups. Place on bottom and sides of greased 9 inch pie pan. Sprinkle with basil. Arrange tomato slices on top of bread, overlapping slightly. Sprinkle with green onions and cheese. Mix milk, eggs, mustard, together and season with salt and pepper. Slowly pour mixture into pie pan. Bake at 375 degrees for 30-40 minutes or until puffed and browned. Let stand 10 minutes before serving. Serves 6.
