RHUBARB BARS 
8 inch square pan

CRUST:

1/2 c. butter
1 1/2 c. flour
1/2 c. oatmeal
1/2 c. brown sugar
1/4 tsp. salt

Mix butter, flour, oatmeal, brown sugar and salt. Put half of the mixture in the bottom of the pan.

FILLING:

1 (8 oz.) pkg. cream cheese
3/4 c. sugar
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1 egg
2 1/2 c. rhubarb, diced
1 tsp. vanilla

Mix together cream cheese, sugar, egg, spices and vanilla. Stir in rhubarb. Pour over bottom crust. Top with remaining crust. Bake at 350 degrees for 40 minutes. Double recipe for a 9 x 13 inch pan.

This tastes great, but doesn't cut like a bar that can be eaten by hand. It's more of a dessert that needs a plate and fork. Again, tastes great, but too soft to eat as a bar.
