LORI'S RHUBARB BARS 
BASE:

1 cup all-purpose flour
1 tsp. baking powder
1/4 tsp salt
1/4 cup (1/2 stick) butter, melted
1 egg
1 tbsp. milk

Preheat oven to 375°F.

Mix the ingredients well; spread in the bottom of a 9-inch square baking pan.

TOPPING:

2 cups fresh or frozen rhubarb, cut up
1 (3 oz.) pkg. strawberry jello
1/4 cup (1/2 stick) butter, melted
1/2 cup sugar
1/2 cup all-purpose flour

Cover the base with rhubarb. Sprinkle jello evenly over rhubarb. Combine last 3 ingredients; sprinkle over mixture.

Bake at 375°F for 45 minutes.
