COTTAGE CHEESE - LIME JELLO
SALAD
 
1 (8 oz.) sm. curd cottage cheese
1 sm. size lime Jello
1 (6-8 oz.) can crushed pineapple
1 (8 oz.) Cool Whip
Nut chips, if desired

Mix cottage cheese and lime Jello (dry). Add crushed pineapple (drain off all juice). Fold in Cool Whip and chill 1-2 hours before serving.

My grandmother Mim always made this for the spring holiday season. She often made a red one during the winter months that included nuts and cranberries. The lime salad is so good and refreshing. What a tasty side dish that allows me to bring some of my best memories of her come alive when I make it.

YES! I KNEW there was a recipe that didn't require dissolving the Jell-O before mixing! My only question is that I thought I remembered someone telling me that the pineapple juice was ok to have in, since no other liquid is added.. Am I wrong? I hope I get it right, since I'm making it now, for Thanksgiving dinner!! HAHAHA!

I really like this salad, it is very good and refreshing. This is not my usual lime jello, pineapple salad .... felt like trying a new recipe and so glad I did! I added 1 cup each of cottage cheese, drained pineapple and cool whip and it seems a good ratio to me, will see when it has chilled. I think more of any of the ingredients could be added to stretch the salad.

I do this except it is an orange version with Mandarin oranges and orange jello but I use sugar free everything. It is an healthier but still a very good snack!!

We've always made this with a small bottle of maraschino cherries cut in half - great for Christmas. And we put the cottage cheese in a blender - makes it a lot smoother!

I made this with sugar free Jello, sugar free Cool Whip, and added walnuts and some 0 calorie sweetener. Absolutely delicious -- tasted like what I had many many years ago!

This is SOOOO good. It is additive... Amazing that 5 ingredients could create something this outstanding. This is definitely a keeper! Especially great during hot weather. but excellent any time of the year.
