“JIFFY CORN CASSEROLE” IS IN:
NEXT RECIPE:  MACARONI AND CHEESE

JIFFY CORN CASSEROLE 
1 can whole kernel corn, drained
1 can creamed corn
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 cup oil)
1 cup dairy sour cream
1/4 to 1/2 tsp. garlic powder (optional)
Shredded cheese (optional)

Preheat to 350°F. Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired.

Bake in casserole dish or 9x13-inch baking dish for 30 to 45 minutes or until fully cooked in center.

Variation: Add chopped chives or green onions.

I use non-fat Greek yogurt instead of sour cream. It adds protein and does not effect the flavor. Chopped onion and bell pepper and bacon bits add some great flavor.

After years of making it, I recommend the following tweaks. Use dip instead of sour cream to give it a flavor boost. Deans French onion with bacon is heavenly. I use one egg, mix the cheese in the batter instead of on top. Add bacon bits/crumbles too. You can't go wrong. I have made it in a crockpot but it is better in the oven and kept warm in a small crock pot or buffet.

This recipe can be done so many ways...by itself, its awesome..but I added Mexican corn, diced green chiles and pepper jack cheese and it turned out unbelievable! :-)

Who doesn't like cheese?!? I use 16oz. of cheese, just makes it yummier! Also, the jiffy box calls for 1 egg. Why do you need two of them???

I substitute 3/4 to 1 cup cubed veleveeta instead of cheddar right into the mix. May have to cook a little longer but it is wonderful.
