Family did not like it. Too mushy and too much rotel. I didn't care for the taste either. Will settle for cornbread next time.

Just leave it a la naturale - original recipe.

Our daughter-in-law served this to us Christmas Eve MINUS the Rotel, and it was so delicious, it was the hit of the meal!

 Mary (Kentucky) replies:
I agree with Diane. This is one thing we eat every Christmas and our recipe does not include the rotel tomatoes either. I don't think the tomatoes in it sounds good. It is in my top handful of things to eat at Christmas.

Betty, I think the tomatoes give the recipe just the "punch" this recipe needs. yum-o

I made the recipe with no Rotel and only used cream corn. It was perfect! Next time, I'm going to try it with the whole kernel corn too. I bet it will be just as good. I don't think the Rotel would add anything pleasant to the recipe either.

Lose the tomatoes. Add 1/2 teaspoon of vanilla, 1 tsp of dark molasses.

I do not use rotel, I just add chiles and it puts a little more kick in it.

 Laurie (New York) says:
I agree with no tomatoes and I add an extra box of jiffy corn bread mix. It thickens it up and makes it more bready. Kids love it!

This is always a get together favorite, WITHOUT the tomatoes. I also use fresh corn cut off the cob instead of canned. YUMMY!

We call this Corn Souffle and a big favorite. Definitely lose the tomatoes (never had it this way) nor want it.

I made this last night. I did use the Rotel Mild. My family and I did like it. I didn't have any Colby Jack cheese, Only sharp cheddar cheese. It is a casserole not corn bread so it is much moister. I was shocked at how large of portion this recipe makes. Plently for more than 4-5 guests or family. I wondered how it would taste reheated, and it is great. For those who think it's too moist, maybe drain the liquids from rotel, or canned corn? I'll make it again. Good comfort food.

This is very yummy - I have had it with corn not drained and I prefer corn drained- very moist - I use 1 stick butter or margarine melted in bottom of casserole - grandchildren love it. I use top 5 ingred with the butter. No tomatoes or cheese. Delicious

I have only prepared this recipe without rotel and love it!! Huge family favorite... but tonight I was attending a Latin potluck and needed to find something to bring... I tried both ways and the rotel recipe was gone before the original... it was a big sucess! I'm so glad I tried the rotel :)
