BARBECUED CUT·UP YOUNG TURKEY | |
3 to 6 pound Young Turkey, cut-up 1 cup flour 2 teaspoons salt 2 teaspoons paprika 1/4 teaspoon pepper 1 stick (1/2 cup) butter 1/4 cup shortening Spicy Barbecue sauce (recipe follows) Dip turkey pieces into mixture of flour, salt, paprika, and pepper. Melt butter and shortening in a shallow baking pan in a hot oven (400°F.). Remove baking pan from oven. As pieces of floured turkey are placed in pan, turn to coat with butter, then bake skin side down in a single layer. Bake in a hot oven (400°F.) for 30 minutes. Turn turkey. Pour Spicy Barbecue Sauce over top (see below). Bake about 30 minutes longer, or until tender. Spicy Barbecue Sauce: 1 medium onion, sliced 2 tablespoons sugar 2 tablespoons vinegar 2 tablespoons Worcestershire sauce 2 teaspoons salt 1 teaspoon chili powder 1/2 teaspoon black pepper 1 cup ketchup 1/2 cup water Combine the above ingredients in a saucepan.
