FRUIT SALAD DRESSING | |
juice from a regular sized can of pineapple 2 eggs 2 level teaspoons flour 1 tablespoon butter 1/4 cup sugar In a small bowl, beat eggs until mixed and lemony colored. In a medium sized Pyrex or microwavable bowl, melt butter and stir in flour and sugar, then add pineapple juice and beaten eggs. Stir all ingredients together until well mixed and cook in microwave on high for 5 minutes. Cool or refrigerate before serving on fruit or Jello salads. Whipped cream may be added just before serving, if desired. We like to serve this with a pineapple and cottage cheese mixture scoop over the top of the salad, but it goes just as well over steamed baby carrots or baby Asian lettuce greens as it does over chopped fruit!
