CHEESY FIESTA POTATO CASSAROLE 
1 (15 oz.) can whole white potatoes
1 (10 oz.) can Campbell's nacho fiesta cheese soup
1/2 lb. grated aged cheddar cheese, divided
1 sleeve Ritz crackers
3 tbsp. butter

Preheat oven to 350°F.

Mix potatoes, soup, and half the cheese in a bowl and mix. Pour mixture into a casserole dish.

Crush Ritz crackers, melt 3 tablespoons of butter and mix. Sprinkle the remainder of the cheese on top of the casserole. Add the Ritz mixture on top of the cheese.

Bake at 350°F for 20 minutes or until golden brown.
