FRESH PASTA SALAD
1 (16 oz.) box large pasta shells or bow tie pasta
1 (6 oz.) can of pitted & sliced black olives (Pearls)
3 fresh Roma tomatoes
1 carrot
3 thick sliced ham (I use deli Tavern ham)
3 thick sliced cheese (I use deli Muenster)
1 cucumber
1 tbsp. mayonnaise
1 tbsp. olive oil
1 (16 oz.) bottle Italian herb salad dressing (Kraft)
a pinch of red pepper flakes

Boil pasta according to package directions. After draining the cooked pasta, place in refrigerator while you prepare the vegetables, meat, and cheese.

Chop tomatoes in quarters (remove seeds). Peel and shave the carrot. Dice the ham and cheese. Cut the cucumber in half vertically and remove the seeds and gooey interior. Leave some green peel on the cucumber and slice.

When the pasta has cooled down, add the prepared vegetables, meat and cheese. Then add a tablespoon of mayonnaise and olive oil and the bottle of Italian herb salad dressing. Finally, add the red pepper flakes and stir with a wooden spoon or spatula until the ingredients are evenly distributed throughout.

Place bowl (covered with Saran or plastic wrap) into the refrigerator and allow it to marinate overnight.

Serve at room temperature as to allow the cheese to soften.

I absolutely loved this recipe! The fresh pasta was so delicious and complemented the vegetables and meat perfectly. The salad dressing added the perfect amount of creaminess to the dish without making it too overwhelming or sticky. I also enjoyed the addition of the red pepper flakes, it gave a nice kick of flavor.

I would definitely make this again!
