CREAMED CHIPPED BEEF GRAVY 
Lg. jar chip beef
3 c. milk
3 tbsp. cornstarch or flour
2 tbsp. butter
Pepper if desired (NO SALT)

Make a smooth paste of the 3 tbsp. cornstarch or flour with about 1/2 cup of the milk. Then add to the 3 cups (or remaining 2 1/2 cups). Add butter and cook over medium heat stirring constantly.

Towards end add the chip beef after you have broken it into small pieces and drained briefly under cold water.

Good idea to do this first so it will be drained when you add it to the cream sauce.)

Very simple and tasty for a quickee meal!
It is important to rinse the dry beef prior to addin it to the gravy unless you LOVE SALT!
Also, you can adjust the thickness of the gravy by adding or subtracting milk. Cooking longer will also thicken the gravy.

Add frozen peas a minute or two before serving. Gives it color and pop! Serve over mashed potatoes and make the potatoes more interesting by mixing in some powdered salad dressing mix. Try ranch or Italian. Experiment.

I make it by sauteing the chipped beef in the butter. Then add fresh mushrooms slowly cooking for a couple of minutes then add the milk that has been shaken in a jar. I finish it off with frozen peas and pepper. Serve on freshly baked biscuits.

If you are looking for healthy alternative to beef or if you are a hunter like me, try using chipped deer. It is delicious and after I have my deer processed, I have enough chipped deer to last for an entire year. I love that I can feed my family and be a provider by hunting.

I prefer to sauté the beef and thyme in butter until crisp and the beef and thyme essence are released then go ahead with either a flour or cornstarch cream sauce . White pepper is good here too but the thyme makes it.
