BLUEBERRY BRAN MUFFINS 
1 1/2 c. shreds of wheat bran cereal
1 1/4 c. milk
1 1/4 c. all-purpose flour
1/2 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 c. (1 pt.) fresh blueberries
1 lg. egg
1/4 c. melted butter

Preheat oven to 400°F.

In a medium bowl, combine bran and milk; let stand for 5 minutes.

Meanwhile in large bowl, combine flour, sugar, baking powder, and salt. Mash 1/2 cup of blueberries with a fork in a cup.

Pour bran mixture into dry ingredients; add egg, melted butter, mashed blueberries, and remaining whole blueberries. Stir just until mixed.

Spoon batter evenly into 12 greased 2 1/2 inch muffin cups. Bake in a preheated oven at 400°F for 20 minutes or until golden brown.

Yield: 12 muffins.

Came out surprisingly moist and light. I also added some lemon peel and I like the mashed blueberries addition. Quite tasty!
